At the start of the school year 2014, ENSAIA is offering the engineering diploma “Food Production” by apprenticeship to answer to the crucial need today, in SMBs as well as large food processing industries, for production engineers with solid scientific and technical knowledge along with state-of-the-art managerial and organizational skills. The principal aim of this program is to prepare engineers that will manage production teams in the food processing sector and who are aware of the social responsibility of a company.
A production engineer manages and coordinates the manufacturing or packaging processes of food products. He must be able to:
- launch a line of production
- implement a schedule that will insure the production objectives
- put into place a policy of continuous improvement in parallel with the production process
- take an important role in implementing the company's social responsibility policy
His skills are principally scientific and technical, but also include human sciences. The entire 3-year program is carried out with theoretical classes at ENSAIA alternating with practical application in a company.

IN THE COMPANY
The student-apprentice will get to know the company and how it operates and carry out assignments with increasing responsibilities. He will apply what he has learned in humanities and social sciences and, in parallel, lead projects related to the academic subjects studied at the school:
- Study of the food processing sector of the company
- Sizing the production facilities
- Structuring a database management system
- Identifying critical control points in the company
- Setting up a work group for continuous improvement
- Carrying out a carbon footprint study of a unit of the company
- Critical study of company management
During his studies he will be asked to:
- 1st year: carry out an analysis of the company operations
- 2nd year: write a technical report on an company issue
- 3rd year: do an end-of-studies project over one semester that will be determined by the company, concerning a production organization issue, dealing with the technical aspects as well as the managerial aspects.
Obtaining the engineering degree will depend on validating the totality of the academic units of the 3-year program.
The entire 3-year program is carried out with theoretical classes at ENSAIA alternating with practical application in a company. During the 3-year program, the student-apprentice will spend 53 weeks at the school (1800 hours), 96 weeks in the company and 8 weeks abroad for a linguistic and cultural internship. The program ends with a 6-month period in the company.

The admissible candidate must present himself before a jury composed of teachers from ENSAIA and representatives from the industry
Only students having an signed apprenticeship contract with a company will be admitted.
Target applicants:
- Recruitment in 1st year
- Holders of a DUT in applied Biology (Food Processing, Biological Engineering) or in Chemical Engineering (Bioprocesses option).
- Holders of a BTS under the condition of having obtained a Baccalauréat in Science or having done a post-BTS program to prepare for a competitive exam.
- Holders of a Licence (Bachelor of Science) (L2, L3, professional licence). - Recruitment in 2nd year
- Students having validated their 1st year at ENSAIA in the initial program.
- Holders of a Master 1 in the disciplines close to the food processing sectors.
